Ingredients

  • 15 oz can chickpeas
  • 1/4 cup sunflower seeds
  • 2 tbsp vegan mayonaise
  • 3 tsp dijon mustard
  • 3 radishes
  • 1 tomato
  • 1/2 red onion
  • 4 slices sourdough bread
  • Lettuce or sprouts
  • Avocado (optional)

Instructions

  1. Make the chickpea mash:  Drain and rinse chickpeas. Mash with a masher or back of a fork. Mix in 1/4 cup sunflower seeds, 2 tbsp vegan mayo, and 3 tsp dijon mustard.
  2. Prepare the veggies: Slice radishes, tomato, red onion, and avocado (optional).
  3. Toast:  Toast the bread.
  4. Plate:  Divide lettuce or sprouts, chickpea mash, radishes, red onion, tomatoes, and avocado (optional) among bread. Enjoy!
