Ingredients
- 15 oz can chickpeas
- 1/4 cup sunflower seeds
- 2 tbsp vegan mayonaise
- 3 tsp dijon mustard
- 3 radishes
- 1 tomato
- 1/2 red onion
- 4 slices sourdough bread
- Lettuce or sprouts
- Avocado (optional)
Instructions
- Make the chickpea mash: Drain and rinse chickpeas. Mash with a masher or back of a fork. Mix in 1/4 cup sunflower seeds, 2 tbsp vegan mayo, and 3 tsp dijon mustard.
- Prepare the veggies: Slice radishes, tomato, red onion, and avocado (optional).
- Toast: Toast the bread.
- Plate: Divide lettuce or sprouts, chickpea mash, radishes, red onion, tomatoes, and avocado (optional) among bread. Enjoy!
