Note: This recipe is completely vegan with the exception of an optional egg.

Ingredients

  • 1 slice of thick sliced sourdough or rye bread
  • 1/4 cup of Just Egg Plant-Based Egg (or 1 egg, non-vegan)
  • 1 tsp olive oil
  • Salt
  • Pepper
  • Chives (optional, garnish)
  • Cherry tomatoes (optional)

Instructions

  1. Using a cookie cutter or drinking glass cut a hole out of the middle of the piece of bread
  2. Prepare the garnishes (optional): Slice the cherry tomatoes in half. Slice the chives
  3. Heat 1 tsp of olive oil in a pan over low to medium heat. Note: I recommend getting this affordable cast iron skillet if you do not yet have one!
  4. Place bread in pan
  5. Add 1/4 cup of Just Egg to fill the hole (or crack an egg in the hole, not vegan). Season with salt and pepper to taste
  6. Cook for 1-2 minutes or until you are able to flip the toast
  7. Flip the toast and cook another 1/2 minutes. Season with salt and pepper to taste
  8. Plate and top with chives and cherry tomatoes (optional). Enjoy!
