Note: This recipe is completely vegan with the exception of an optional egg.
Ingredients
- 1 slice of thick sliced sourdough or rye bread
- 1/4 cup of Just Egg Plant-Based Egg (or 1 egg, non-vegan)
- 1 tsp olive oil
- Salt
- Pepper
- Chives (optional, garnish)
- Cherry tomatoes (optional)
Instructions
- Using a cookie cutter or drinking glass cut a hole out of the middle of the piece of bread
- Prepare the garnishes (optional): Slice the cherry tomatoes in half. Slice the chives
- Heat 1 tsp of olive oil in a pan over low to medium heat. Note: I recommend getting this affordable cast iron skillet if you do not yet have one!
- Place bread in pan
- Add 1/4 cup of Just Egg to fill the hole (or crack an egg in the hole, not vegan). Season with salt and pepper to taste
- Cook for 1-2 minutes or until you are able to flip the toast
- Flip the toast and cook another 1/2 minutes. Season with salt and pepper to taste
- Plate and top with chives and cherry tomatoes (optional). Enjoy!
