Note: This recipe is completely vegan with the exception of an optional fried egg.

Ingredients

  • 2 slices of thick sliced sourdough or rye bread
  • 1 avocado
  • 10 cherry tomatoes
  • 1/2 cup microgreens
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/2 tsp cumin
  • 1/4 tsp chili powder or red pepper flakes (optional)
  • Fried egg (optional, non-vegan)

Instructions

  1. Toast the bread.
  2. Slice the avocado. Season with salt, pepper, cumin, and chili powder to taste. Mash if desired.
  3. Slice the cherry tomatoes in half. Season with a dash of salt, pepper, and garlic powder.
  4. Place avocado slices or mash on toast. Top with optional fried egg, microgreens, and cherry tomatoes. Enjoy!
